Bolivians everywhere are celebrating their independence day, August 6, this whole week. And what better way, than with food?
We found some authentic Bolivian recipes on the blog, Bolivian Cookbook, for you to try at home.
Blogger, Rommy Cornejo Diaz, is a Bolivian native who grew up in Cochabamba "the food capital of Bolivia." Since the age of 5, she learned how to cook and fell in love with culinary arts. She went on to get her bachelors degree in food engineering.
Empanadas Tucumanas are baked dough patties stuffed with meat, eggs, potatoes and vegetables. They are compact enough to eat on-the-go or as an appetizer.

For a more American dish, with a Bolivian twist, try Pique a lo Macho, which is made up of a mountain of potatoes, meat, olives, tomatoes, eggs, and jalapeños. This dish almost mirrors nachos minus the tortilla chips, and add potatoe wedges.

And for dessert, try the Bolivian version of Tres leches - a sweet desert cake soaked in condensed milk.
