Chiles rellenos are filled with rich, robust flavor and enjoyed in Mexico throughout the year.
Because they are made with the mild poblano chile pepper, which originates in Puebla, Mexico, this traditional dish is thought to also originate in the same town in southern Mexico.
According to MexicoLindoyQuerido.com, the chile relleno resulted from a "fortunate mixture of indigenous and European ingredients---a fusion of the native vegetable...with the foreign filling of sardines, cheese or picadillo (pork diced with raisins, nuts and seasoning)."
Although some versions contain meat in the recipe, and most often times the peppers are fried in egg batter, this healthier version from Vegetarian Times is baked and contains no meat.
